Restaurant Morille in Koudekerke no longer has its Green Michelin star. Chef Floris Vriens continues to cook with a focus on sustainability, putting vegetables first, using nearby ingredients and experimenting with Zeeland products.

The restaurant says its ingredients should be recognizable in the dishes, including when it uses products from Zeeland. Vriens also emphasizes that diners do not need to travel far to eat well.
